But besides this, the Traditional Cuisine of Uttarakhand has its delicious and healing Factor with its own recipes and flavors. The cooking and food of Uttarakhand are simple yet delicious. The food habit variation of Uttarakhand changes with the seasons and go with the harsh weather in hilly regions. Uttarakhand is cleaved into two regions i,e.Garhwal and Kumaon with common dishes but different names. And with this separation, the flavor and taste of food also go extensive.

  1) KAFULI

Kafuli is a Garhwali dish which is a very well known and popular dish of Uttarakhand. The main ingredient of Kafuli is Spinach, a lush green leafy vegetable. It is a food that can be an asset to diet-conscious peoples. It is prepared in Iron vessel (kadhai) with thick gravy and an aroma of Fenugreek leaves(methi).

INGREDIENTS(SERVES FOUR):

 2 cups Spinach leaves

1 cups Fenugreek leaves(Methi)

1 inch Ginger [chopped]

2 Green Chilli [chopped]

1 teaspoon Cumin powder

1/2 teaspoon Turmeric powder

1 teaspoon Coriander powder

1 pinch hing

1 tablesoon Rice flour

1/4 cup Curd

Salt,as per taste

2)BHANG KI CHUTNEY

If you are mesmerized by the name and the picture, and guessing it as hemp or Cannabis then you are absolutely right. 

Bhang ki chutney is prepared by the roasted seeds of Hemp(Bhang). A very enjoyable and inviting taste of this chutney induce you to savoured it. Basically it is the accompany or sauce to join another meal ,but its own flavour and appealing taste makes it a unique dish.

INGREDIENTS(SERVES FOUR):

1/4 Cup of roasted hemp seeds(bhang)

2-3 fresh hot red or green chillies

Coriander and Mint leaves

Juice of half a lime/Curd

Salt ,as per taste

3)MANDUA KI ROTI

MANDUA KI ROTI

These delicious and nutritious Mandua ki roti(Chapatis) are made from Mandua flour (Finger millet).It is very well known and common food in Uttarakhand during Winters because they keep body warm in the harsh whether and hilly regions of Uttarakhand.

The recipe of Mandua ki roti is simple and delicious,Mandua flour is mixed with Wheat flour to give a winning taste and texture.It can be accompanied by butter or ghee.

INGREDIENTS(SERVES FOUR):

600 gm Mandua flour

200 gm Wheat flour

Water,as required

4)JHANGORA KI KHEER

Jhangora or Barnyard millet is one of the oldest food known to mankind in Uttarakhand. Jhangora ki kheer is  Mouth watering dessert or pudding in Uttarakhand Cuisine.It is a nutritious and non acidic form of food and easy to digest because of being gluten free.This dish is the Delicacy of Uttarakhand Cuisine.

INGREDIENTS(SERVES FOUR):

1&1/2 Cups Jhangora (Millet)

1/2 Cup Sugar

2 Quarts Milk

1/2 tablespoon cashew nuts

1/2 tablespoon raisins

1/4 cup almonds

5)CHAINSOO

Chainsoo - A Traditonal dish of Uttarakhand
CHAINSOO

Chainsoo is a famous Pahari dish of  Uttarakhand made by a pulse Ground black dal(kaali dal).Chainsoo is rich in protien and heavy to digest so it is roasted and grinded before making it. Chainsoo is nutritious and extremely useful to keep you strong. With loads of spices which are used as a part of the ingredients,Chainsoo ensue an awesome sharp fragnance of these spices.

INGREDIENTS(SERVES FOUR):

1 Cup Ground black dal

1 tablespoon Ghee

4-5 Cloves of Garlic

1 tsp Cumin seeds

1 tsp Turmeric powder

2-3 tsp Chilly powder

1 tsp Garam masala

Salt,as per taste.

6)PHAANU

PHAANU

Phaanu is an another dish of Uttarakhand with a texture of thick gravy and finger-licking taste. Phaanu is some how similar to Chainsoo but the main ingredient of Phaanu is the Gahat Dal(Horse Gram), which is high in protien and has immense nutritive values and fitness benefits. Gahat is soaked in water for 4-6 hrs then grinded for preparing this delicious dish.

INGREDIENTS(SERVES FOUR):

1 cup Gahat(Horsegram)

4-5 cloves of Garlic

1/2inch piece of Ginger

3-4 Green Chillies

1 tsp Jakhiya(Cummin seeds)

A pinch of Hing

1/2 tsp Coriander Powder

1/4 tsp Turmeric powder

Salt,as per taste

7) KANDALI KA SAAG

KANDALI OR BITCHU GHAAS

Kandali or Bitchu ghaas is a wild bushy grass that is found in hilly regions of Uttarakhand. It has stingy and thorny leaves and if it touches any body part it itches badly. Many children went through a painful and funny experience with Kandali in their life. But looking towards other side,this wild bushy grass have highly nutritional values. 

 Kandali leaves are boiled to remove stingy thorn and then prepared for cooking. Kandali ka saag is prepared in Iron vessel(kadhai) to add Iron nutritients to the dish.

INGREDIENTS (SERVES FOUR):

1 kg Kandali or Bitchu booti leaves

4-5 Green Chilli

1 /2 tablespoon Garam masala

1 tsp Turmeric

1 inch piece of Ginger

3-4 cloves of Garlic

8)GULGULA

GULGULE

Gulgula or Sweet fritters are small round shaped Pahari sweets made up of wheat flour. In Uttarakhand, Gulgula is made in home on Special occasions like birthdays, festivals.etc. It is devoured by all age groups but specially kids savoured it alot. People also called it Mini donuts.

INGREDIENTS (SERVES FOUR):

1/2 Cup wheat flour

1/2 cup Sugar

1 tsp Cardamon powder(Elaichi)

1 tsp fennel seed powder(saunf)

2 tablespoon yogurt

Oil or ghee to fry

9) KHATAI

Khatai or Chook is the most lips smacking and  favourable dish in Uttarakhand cuisine. It is a type of salad made by Malta or Chook by peeling and removing the seeds and mashing ingredients into it to create your own craving taste and flavour. Khatai has multiple exploding taste of sour,sweet,salty,bitter.etc. 

After first bite you will definetely smack your lips.

INGREDIENTS (SERVES FOUR):

3-4 Malta’s/Chook

1/2 Cup Sugar

1 tsp of roasted Sesame seeds(til)

1 tsp of Bhang ki chutney

2 tablespoon of Curd

10)ARSA

ARSA

Arsa is a Sweet Pahari delicacy of Uttarakhand. This savoured dessert is made on special occassions like wedding,traditional fuctions.etc. The main ingredients of Arsa are rice,jaggery and musturd oil. It is prepared in tradional way of Uttarakhand and cooked in a huge vessel (tasla).

INGREDIENTS (SERVES FOUR):

2 Cups Rice

200 gm Jaggery

300ml Mustard oil

Water as required

11)BAL MITHAI

Bal mithai is like a gem sweet from Almora, Uttarakhand with mouth watering flavours and exquisite looks. This sweet has numerous fan all over the country. Such a savory dessert is a brown chocolate like fudge,made with roasted khoa,coated and garnished with white sugar balls. It is one of the most favourite sweet of common people and the people living near almora region.

INGREDIENTS (SERVES FOUR):

2kg Khoya

1/2kg Powdered Sugar

150gm Granulated sugar

4 tsp Ghee

12)GAHAT KE PARATHE

GAHAT KE PARATHE

Gahat ke parathe is an excellent breakfast option in Uttarakhand, Prepared by stuffing Gahat Dal in the Wheat and Mandua flour. It is the delicacy and contains alot of benefiting nutrients and with fragrance so lovely that it makes enough space for having 4-5 Parathas on the double. Bhang ki chutney is perfect to serve with this delicious parathas. 

INGREDIENT (SERVES FOUR):

For filling:  1cup Gahat dal

4-5 Cloves Garlic

1 inch piece Ginger

1-2 Chillies

Coriander leaves(Chopped)

To make parathas : Wheat and Mandua flour dough

Pahari’s are very hardworking people and the same reflects in their cuisine. The cuisine of Uttarakhand is wellversed and delicious even from the simplest ingredients they have.These mouth watering dishes of Uttarakhand cuisines are the traditional and local cuisines.
