Spinach means keeping it Spin,ich
Have you watched a Cartoon show, Popeye?
When I was a kid, I used to watch it and wonder how come he has big muscles by only eating Spinach.
Today I am sharing a leafy vegetable – Spinach recipe with you.
Basically, This recipe name is Kafuli, and it is a Uttarakhand Cuisine recipe. So, before jumping straight to the recipe, let me give you some features and benefits of Kafuli.
Kafuli is a traditional dish of Uttarakhand Cuisine. Made by blending Spinach into thick Paste and then saute with the Flavoursome hot spices.
This leafy vegetable, Spinach has many nutrients like Vitamin A, C, K, Magnesium, Iron, etc, And many health benefits including Eye health, reduce Oxidation stress, reduce Blood Pressure, etc.
In early time, Kafuli used to be cooked in Iron Vessel because it gives extra Iron to the dish and keep it Nutritious.
If you go through the Uttarakhand Cuisine you will notice that Pahadi’s (Hilly region peoples) don’t have any extra aspect of Ingredients. But the Pahadi’s have Easy and Creative Recipes with the Simple and Common Ingredients.
For making Kafuli also, you doesn’t need extra ingredients. You just need:
- 2 Bay leaves
- Cumin seeds
- 2 Onion
- 2 Tomato
- Garlic, 4 cloves
- Spices (Red chili, Turmeric powder, Coriander powder)
- Salt, as per taste
Take a handfull of Spinach, wash them and add to the Blender to make fine Thick Paste.
Take any pan, Kadhai, or any vessel as per your wish. Add oil to it and let it be warm.
Add Bay leaves and cumin seed and let it be brown in colour, Then add Garlic and Chopped Onions and Saute it until it gets brown in Colour.
Then add Tomatoes and saute them. After few minutes add Spices and salt, as per taste, saute them, and left it for 10 to 12 minutes to observe flavors of spices.
Then add, Spinach Paste/Puree and water to it and left it for well cooking.
Serve it with steam rice and curd
